How do you convert oven to air fryer?

Lower the temperature by 25F, about 15C, and cut the time by roughly 20 percent. An air fryer is a small convection oven, so moving air carries heat to the food faster than still air does, and the same dial setting cooks hotter than it would in an oven.

That rule is reliable for thin and frozen food and steadily less so as the food gets thicker. Fast air changes the surface, not the centre. A tray of fries is a third quicker; a whole chicken is barely fifteen percent quicker, because the heat still has to travel inward at its own pace.

Read the last two rows together. Cookies save almost half their time and a whole chicken saves under a fifth, and the difference is thickness, not the machine.

How to convert a recipe

  1. Drop the temperature by 25F. About 15C. The moving air transfers heat faster than still air, so the same dial setting cooks hotter.
  2. Cut the time by about 20 percent. A quarter for thin or frozen food, closer to a tenth for anything thick, which is where most charts mislead.
  3. Leave space around the food. A single layer with gaps. A crowded basket is just a small oven, and the timings stop applying.
  4. Check early, at about 70 percent. Air fryers vary more than ovens do. The first time you cook something, the chart is a starting point.
  5. Judge doneness by temperature, not time. Chicken at 165F, and let the number decide rather than the clock.

For most things, yes. An air fryer is a small convection oven, and moving air transfers heat faster than still air, so the same dial cooks hotter. Dropping 25F, roughly 15C, brings it back in line. The exceptions run lower still: bacon and anything very fatty will smoke at 400F because the fat drips onto the element.

About 20 percent on average, but that average hides the useful detail. Thin or frozen food can be a third faster, because almost all of the cooking is happening at the surface. A thick cut is barely faster at all: the heat still has to reach the middle, and the air outside cannot speed that up. A whole chicken saves maybe fifteen percent.

The temperature was too high for the thickness. Fast-moving air cooks the surface quickly, so a thick piece needs a lower temperature and more time, not the usual conversion. Drop another 25F and go back toward the oven timing. This is the single most common air fryer failure and it is a thickness problem, not a machine problem.

For anything that cooks in under about 15 minutes, yes, 3 to 5 minutes is worth it, because a cold basket means the surface never sears and the food dries instead. For longer cooks it matters much less. Timings in this chart assume a preheated basket.

Yes, with one rule: never preheat with loose parchment in an empty basket. The air moves fast enough to lift it into the element. Weigh it down with the food, keep it clear of the sides so air can circulate, and do not cover the whole base or you have blocked the thing that makes it an air fryer.
